SHIPWRECK CASSEROLE | |
2 tbsp. oil 2 large onions, sliced thin 1 lb. lean ground beef 1/4 c. uncooked rice 2 stalks celery, chopped 3 large potatoes, sliced thin 1 bell pepper, chopped 1 can red kidney beans, drained 8 oz. V-8 juice Drizzle oil over bottom of 13 x 11 x 2-inch casserole. Place onions in bottom of casserole. Layer beef on top of onions, rice on top of beef, celery on top of rice, potatoes on top of celery, pepper on top of potatoes and beans on top of pepper. Pour V-8 juice over top of all. Cover with foil. Bake at 350°F for 2 hours. |
