BACON STUFFED POTATOES 
8 lg. baking potatoes
1/4 c. butter
1 c. sour cream
1 egg
1 tsp. salt
1/8 tsp. black pepper
9 crisp bacon slices

Working with warm potatoes that have been baked at 400 degrees for about 1 hour (until fork tender), cut a long oval slice from one side and scoop out potato. Add butter, sour cream, egg, salt and pepper to potatoes. Beat well. Stir in crumbled bacon. Pile into 6 shells, mound high. Sprinkle with paprika.

For freezing, allow to cool. Wrap separately. Heat frozen potato about 45 minutes to 1 hour.
