FRAISES BRULEE 
1 qt. fresh strawberries, washed & hulled
1 pt. heavy cream
1 c. brown sugar
1 tbsp. Kirsch
3 tbsp. brandy

Cover the bottom of a 2-quart casserole or souffle dish with berries. Add enough Kirsch and brandy to just cover the fruit. Add 2 inches of whipped cream and 1 inch layer of brown sugar. Refrigerate for 4 hours. To serve, place under broiler to brown lightly and quickly for 1 to 1 1/2 minutes. Preparation time: 30 minutes. Serves: 8.
