SUCCOTASH 
2 cans stewed tomatoes
2 cans whole kernel corn, drained
1 1/2 med. onion, chopped
1 med. bell pepper, chopped
1 (10 oz.) bag fresh okra (steamed until cooked)
Fried meat grease, approximately 3 heaping tbsp.

Heat grease in cast iron skillet. Add diced stewed tomatoes. Simmer for approximately 5 minutes. Add corn and remaining ingredients. Season to taste with salt, pepper (white pepper if available). Stir occasionally over medium heat, stirring approximately every 5 minutes until all ingredients are done, occasionally adding more fried meat grease as needed to prevent sticking.
