COCONUT SLICES 
2 c. flour
1/2 tsp. salt
2 tsp. baking powder
1/2 c. sugar
6 oz. (3/4 c.) butter
6 tbsp. milk
1 egg

Mix all the dry ingredients together. Rub butter into dry ingredients. Beat egg well, add milk and mix it into the dry ingredients to form a soft dough. Press the dough onto a greased baking sheet.

FILLING:

Apricot jam (enough to cover the dough in baking sheet

TOPPING:

1 egg
1/2 c. sugar
1 tsp. vanilla
1 1/2 c. coconut, grated
Milk

Beat egg. Add sugar and mix well. Add vanilla and coconut. Then add just enough milk to form a mixture that will spread easily over the apricot jam. After spreading topping over jam, bake for 15-25 minutes in a preheated oven of 350 degrees. Remove from oven and cut into squares while still warm. Leave to cool in pan, before removing.
