STIR FRY CHICKEN 
1 tbsp. oil
2 chicken breasts, skinned, boneless, cooked & bite size
1/2 lb. mushrooms, sliced
1/4 lb. snow peas
1-2 sm. zucchini, peeled & diced
1 can sliced water chestnuts, diced
2-3 stalks diced celery
2-3 carrots, sliced thin
2-3 green onions, diced
Rice, steamed
1-2 tbsp. soy sauce
Dash or 2 of ginger

Quickly saute chunks of chicken until just done and tender, in 2 tablespoons oil. Remove from pan. In juices, add and saute zucchini, celery, onion and carrots. After a few minutes add mushrooms, snow peas and water chestnuts. Cook until just tender.

Sprinkle dash of ginger and add soy sauce. Add chicken back into pan; heat through. Serve over steamed rice. Very good for you. So healthy.
