TURKEY - POTATO SOUP 
3 tsp. salt
4 1/2 c. water
6 potatoes, thinly sliced
3 med. onions, thinly sliced
3 stalks celery, finely chopped
3 bay leaves
9 c. thin white sauce
3 tsp. celery salt
3 c. chopped turkey

Add salt to water in large kettle; bring to a boil. Add potatoes, onions, celery, and bay leaves. Cook until tender. Press through sieve (I mash with a potato masher). Add to white sauce. Add remaining ingredients. Heat through.

THIN WHITE SAUCE:

3 tbsp. butter
1 1/2 to 3 tbsp. flour
3/4 tsp. salt
1/4 tsp. pepper
3 c. milk

Melt butter over low heat. Blend in flour and seasonings. Stir until mixture is smooth and bubbly. Remove from heat. Stir in milk. Bring to a boil, stirring constantly. Boil 1 minute. Makes 3 cups. (If using for turkey potato soup, it need to be tripled.)
