ANGEL HAIR MARINARA 
2 tbsp. olive oil
2 c. diced zucchini
1 c. diced mushrooms
1 c. diced onion
1 3/4 c. chunky tomatoes (undrained)
1 c. (8 oz.) tomato sauce
1 tsp. dried oregano leaves
1/4 tsp. garlic powder
1 (12 oz.) pkg. angel hair pasta (uncooked)
1/2 c. Parmesan cheese, divided

In large skillet, heat oil; add onions, mushrooms and squash. Cook 5 minutes, stirring often. Stir in tomatoes, tomato sauce, garlic and oregano. Heat to boiling; reduce heat and simmer, covered, 5 minutes.

Meanwhile, cook angel hair pasta according to package directions and drain. Stir 1/4 cup of cheese into sauce. Toss with hot pasta. Sprinkle with remaining cheese.

Makes 6 servings.
