RICE LASAGNA | |
1 1/2 c. long grain rice 1 lb. ground beef 1 med. size onion, chopped 1/4 c. chopped green pepper 1 (32 oz.) jar spaghetti sauce 1 egg 1 (16 oz.) low-fat cottage cheese 1 (8 oz.) pkg. Mozzarella cheese, shredded 1/4 c. grated Parmesan cheese Cook rice following directions on package; salt is optional. Reserve. Coat 13 x 9 x 2 inch baking dish with non-stick vegetable oil. Brown beef in large skillet over medium high heat. Breaking up clumps carefully pour off excess fat. Add onion and green pepper. Cook 2 minutes. Add spaghetti sauce. Beat egg slightly in medium size bowl. Stir in cottage cheese and Mozzarella cheese. Spread half the meat sauce over bottom of prepared dish. Spoon half rice evenly over sauce, top with half the cheese mixture. Repeat layers. Sprinkle top with Parmesan cheese. Bake in preheated 350 degree oven for 50 minutes. Let stand 10 minutes before serving. NOTE: Makes 12 servings, 20 gm protein, 676 mg sodium, 54 mg cholesterol, exchanges - 1 stick, 3 veg, 3 lean meat, 1 1/2 fat. 338 calories. |
