BLUEBERRY OATMEAL BREAD 
2 c. flour
1 c. quick cooking rolled oats
3/4 c. sugar
2 tsp. baking powder
1 tsp. grated lemon peel
1/2 tsp. baking soda
1/2 tsp. salt
1 1/4 c. skim or lowfat milk
1/3 c. oil
2 tsp. vanilla
2 eggs, slightly beaten
1 c. frozen blueberries, thawed, well drained

Heat oven to 350 degrees. Grease bottom only of 9 x 5 inch loaf pan. Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, oats, sugar, baking powder, lemon peel, baking soda, and salt. In small bowl, combine milk, oil, vanilla and eggs; mix well. Add to dry ingredients; and stir just until moistened. Gently fold in blueberries. Bake at 350 degrees for 50-60 minutes or until toothpick comes out clean.
