PINEAPPLE - CARROT CAKE | |
2 c. flour 1 c. sugar 1 tsp. baking soda 3/4 tsp. salt 2 tsp. cinnamon 3 eggs 1/2 c. oil 3/4 c. buttermilk 2 tsp. vanilla 2 c. shredded carrots 1 c. chopped nuts 1 c. flaked coconut 2/3 c. drained, crushed pineapple Whipped cream (optional) Sift together flour, sugar, baking soda, salt, and cinnamon; set aside. Beat together the eggs, oil, buttermilk, and vanilla. Gradually add the flour mixture. Stir in the carrots, nuts, coconut, and pineapple. Pour into a well greased 9 x 13 inch pan. Bake in preheated 350 degree oven for approximately 40 minutes. Serve warm or cold either plain or with the whipped cream. |
