PINEAPPLE COCONUT CARROT CAKE | |
2 c. sugar 2 c. grated carrots 1 1/2 c. salad oil 1 sm. can crushed pineapple & juice 3 eggs 3/4 c. coconut 3 c. flour 2 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. salt 2 tsp. vanilla 1 1/2 c. chopped nuts Combine sugar, oil, carrots, pineapple, eggs and vanilla. Add coconut. Add sifted ingredients. Add nuts. Bake in 11 x 15 inch pan at 350 degrees for 1 hour. Frost when cool. FROSTING: 1 (3 oz.) cream cheese 4 tbsp. butter 2 c. powdered sugar 1 tsp. vanilla Cream together. |
