HAMBURGER SAUSAGE 
5 lb. hamburger meat
5 rounded tsp. of Morton's Tender Quick
2 1/2 tsp. mustard seed
2 tsp. coarse ground pepper
1 tsp. hickory smoked seasoning salt
2 tsp. garlic salt

Day 1: Mix all ingredients; refrigerate. Cover tightly.

Day 2: Stir up mixture again and refrigerate.

Day 3: Repeat.

Day 4: Form 5 rolls and place on broiler pan on bottom oven rack. There is a little or no shrinkage, so form the rolls accordingly. Bake 8 hours at 150 degrees. Turn every 2 hours. It forms it's own casing. Other spices may be added according to taste such as liquid smoke, sausage seasoning, onion salt.

To make pepperoni: Same as above, plus: 1/2 teaspoon crushed red pepper, 1 teaspoon fennel seed and 1/2 teaspoon ground anise.
