SHOE PEG CORN CASSEROLE 
1/2 c. chopped celery
1/2 c. chopped green pepper
1/2 c. chopped onions
1 can French style green beans, drained
1 can shoe peg corn
1/2 c. grated cheese
1 can mushroom soup
1 c. sour cream
1 stick butter
1 stack Ritz crackers

Mix first 8 ingredients and put in casserole dish, 8 1/2 x 13 inch. Crush Ritz crackers and mix with melted butter. Cover top of casserole with cracker mixture. Bake at 350 degrees for 45 minutes. Yum!
