CREAMY RICE PUDDING 
1 qt. milk
2 eggs
1 tsp. vanilla
1/2 c. to 3/4 c. rice
1/2 c. sugar
16 oz. frozen coffee lightener, defrosted
1/2 c. raisins, (optional)

Rinse rice well until water is clear. Add 1 quart milk. Bring to boil slowly then let cool for 15 minutes. Add 12 oz. coffee lightener and cook for 5 minutes. Beat together 2 eggs, sugar, vanilla and 4 oz. lightener. Add to rice mixture. Place in serving bowl and sprinkle with cinnamon.
