SWEET REFRIGERATOR PICKLES 
6-8 med. cucumbers, unpeeled
1 green or red pepper, seeded and chopped if desired
2 c. mild cider vinegar
2 c. sugar
1/2 tsp. allspice
1/4 c. non-iodized salt
1 1/2 tsp. mustard seed
1/2 tsp. celery seed
2 whole cloves

Select young firm cucumbers. Slice into even slices. Place in a large bowl. Bring vinegar, sugar, spices and salt to a boil. Boil one minute. Immediately pour over cucumbers. Pack in hot sterile jars. Cover nd cool. Refrigerate one week before using. Pickles may also be processed if you wish to keep them longer. Makes 3-4 pints.
