PEA PICKING CAKE 
1 pkg. yellow cake mix
4 eggs
1/2 c. cooking oil
1 sm. can mandarin orange slices, undrained

Mix all ingredients well in a large bowl, using all the orange juice. Pour batter into a greased 9x13 inch pan. Bake at 350 degrees for 20 to 30 minutes until golden brown. Let cool.

ICING:

1 med. can crushed pineapple
1 (8 oz.) Cool Whip
1 lg. pkg. vanilla instant pudding mix

Mix pineapple and its juice with pudding mix. Blend in Cool Whip. Spread on top of cooled cake. Refrigerate for several hours before serving.
