OVEN SWISS STEAK 
1/2 to 3/4 lb. boneless beef round steak, 3/4 inch thick
2 tbsp. all purpose flour
1/2 tsp. salt
1 (8 oz.) can (1 c.) stewed tomatoes
1/4 c. chopped celery
1/4 c. chopped carrot
1 tbsp. chopped onion
1/4 tsp. Worcestershire sauce
2 tbsp. shredded sharp process American cheese

Cut meat into 2 portions. Mix flour and salt; pound into meat; set aside remaining flour. Brown meat in small amount of hot shortening. Place meat in small shallow baking dish. Blend remaining flour with drippings in skillet. Add remaining ingredients, except cheese, and cook stirring constantly, until mixture boils. Pour over meat, cover and bake in moderate oven (350 degrees) for 2 hours or until meat and vegetables are tender.

Sprinkle cheese over meat. Return to oven for few minutes. Makes 2 servings. Baked potatoes: Scrub and prick 2 baking potatoes; add to oven last 1 1/4 to 1 1/2 hours.
