SCALLOPED SHOE PEG CORN 
12 oz. can shoe peg corn, not drained
1 c. Ritz cracker crumbs
2 eggs
2 tbsp. brown sugar
Salt and pepper to taste
1/2 c. milk
2-3 tbsp. melted butter

Butter casserole dish; put in 1/2 of crumbs. Pour in corn. Beat together egg, milk, brown sugar, salt, pepper, and melted butter. pour over corn. Cover with remaining crumbs. Bake 35-40 minutes at 350 degrees.
