SPICY PUMPKIN CAKES 
4 eggs
1 3/4 c. (16 oz. can) Libby's solid pack pumpkin
(One Pie brand, which has 15 oz. of pumpkin works well, too)
1 c. sugar
3/4 c. firmly packed brown sugar (you may also use the new pourable brown sugar)
1 c. oil (Puritan works well)
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt

1. Beat eggs in large mixer bowl.

2. Add pumpkin, sugars and oil; beat well.

3. Add remaining ingredients. Beat until well blended.

4. Spoon batter into paper-lined muffin tins, filling 3/4 full.

5. Bake at 350 degrees for 20 minutes or until toothpick inserted in center comes out clean. Cool on wire rack. Frost.

CREAM CHEESE FROSTING:

3 oz. cream cheese
1/2 c. butter
1 tsp. vanilla
2 c. powdered sugar
