SPINACH DELIGHT 
3 boxes frozen chopped spinach
1/2 pt. sour cream
18 Ritz crackers
1/4 stick butter

Cook spinach as directed (salt and butter it slightly). Drain and fold in 1/2 pint sour cream. Crush Ritz crackers, melt 1/4 stick butter and mix together. Put spinach in casserole dish, top with cracker mix. Bake at 325 degrees for 25 minutes. Serve 4 to 6.
