FRUIT MINCEMEAT (Sugar - Free) 
2/3 c. currants
2/3 c. raisins
2/3 c. golden seedless raisins
1/2 c. dates, chopped
2 dessert apples, grated
2 tsp. mixed spice
1 med. carrot, grated
Grated rind and juice of 1 lg. lemon
1/2 c. slivered almonds, crushed
2 tbsp. butter, chilled & chopped
1/2 c. brandy

1. Mince currants, raisins, golden seedless raisins and dates together into a mixing bowl.

2. Add apples, carrot, lemon rind and juice, almonds, butter, spices and brandy. Mix thoroughly. Cover and leave in refrigerator overnight. Alternatively, this recipe may be made in the food processor.

Storage: Place mincemeat in sterilized jars, seal and keep in the refrigerator up to 2 weeks.
