CHICKEN ALFREDO NACHOS 
These are always a hit!!!

2 or 3 chicken breasts
salt, pepper and garlic powder, to taste
your favorite prepared Alfredo sauce
1 pkg. fresh mushrooms
1 cup cheddar cheese
1 cup mozzarella cheese
tortilla chips

Toppings:

large tomato, diced
jalapeno slices
green onions, diced
black olives (optional)
dairy sour cream
guacamole

In large skillet cook chicken until done with salt, pepper and garlic to taste, let cool and tear apart with fork... shredded, not chopped.

In small saucepan heat your favorite Alfredo Sauce and add chicken. Slice and sauté mushrooms and place in Alfredo Sauce. Sauce should be the same consistency as if you were making Nacho cheese sauce. If sauce is too thick add a bit of milk to thin it.

Place tortilla chips on a large cookie sheet and drizzle chicken, mushroom Alfredo over top of chips. Sprinkle Cheddar cheese and Mozzarella cheese over top (be generous). Place in oven for about 5 to 8 minutes at 375°F or until cheese is melted.

Remove from oven and sprinkle diced tomatoes, jalapeno slices and sliced green onions evenly over nachos. You can also add black olives for extra flavor. Place about 2 tablespoons of sour cream in the center and 2 tablespoons of guacamole. Eat and enjoy!
