STUFFED FILLETS OF FLOUNDER 
1 c. butter, melted
1/3 c. lemon juice
1/4 tsp. white pepper
1/8 tsp. paprika
1 1/3 c. cooked brown rice
1 c. sharp Cheddar cheese, shredded
1/2 lb. fresh broccoli (or 1 (10 oz.) pkg. frozen broccoli), steamed and chopped
2 lbs. flounder fillets (sole may be used)

Preheat oven to 375 degrees.

Mix butter with lemon juice, pepper and paprika; set aside.

In a bowl, mix rice, cheese and broccoli and add 1/4 cup lemon butter - reserve remainder.

On a large sheet of wax paper, lay fillets flat. Divide rice stuffing equally and place portion on wide end of each fillet. Gently roll up each fillet and place seam side down in large shallow baking dish, coated with some lemon butter. Pour rest of lemon butter over fish. Bake 20 minutes or until done (fish will flake).
