COCONUT BROILED SWEET POTATOES 
4 or 5 average size sweet potatoes
1 1/4 c. coconut, divided
1/2 c. firmly packed brown sugar
1/4 c. butter, melted
1/4 c. whipping cream
Some maraschino cherries, halved

Cook sweet potatoes until tender. Let cool, peel and cut in half lengthwise. Arrange the potatoes in a greased 13x9x2 inch baking dish, sprinkle with 1 cup coconut.

Combine brown sugar, butter and whipping cream; pour over sweet potatoes. Top with remaining 1/4 cup coconut and spot cherry halves around over top. Broil 5 inches from heat 2 or 3 minutes or until lightly browned.
