BREAD PUDDING 
4 thin slices bread, spread with butter
2 c. milk (skim) or 1% or 2%
2 eggs or egg beaters
4 tbsp. raisins
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
1 grated apple

This is a low-calorie cube bread. Heat milk, eggs, salt, cinnamon, vanilla and apples together. Spray small baking dish with non-stick spray. Pour pudding in casserole and sprinkle with nutmeg. Place casserole in pan of water (hot). Bake at 350 degrees for 50 minutes on middle shelf. (This is also good for diabetics.)
