BROCCOLI AND RICE CASSEROLE 
1 tbsp. diced onion
1/4 c. butter
2 c. quick-cooking rice
2 c. water
1 (10 oz.) can cream of mushroom soup
1/2 tsp. salt
2 (5 oz.) jars sharp Old English cheese
2 (10 oz.) pkg. frozen chopped broccoli, thawed

Combine all ingredients in a covered casserole dish. Bake about 1 hour at 325 degrees. Stir once or twice during baking time.
