EASY ENCHILADAS 
8 flour tortillas
1 (19 oz.) can chili
1 can refried beans
12 oz. cheddar cheese, grated
Sm. onion, chopped

Soften tortillas one at a time by dipping into boiling water for a few seconds. Remove tortilla from water, drain, place flat then fill center with beans, cheese, and onion (optional). Fold edges of tortilla with one side over lapping the other to form enchilada. Place in a 9 x 13 x 2 inch pan or baking dish. When all enchiladas are filled and in pan, pour chili on top covering enchiladas well. Sprinkle onions (optional) and remainder of cheese on top. Cover with foil and bake at 375 degrees for 25 minutes or cover with plastic wrap and microwave on high about 8 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
