DEEP FAT SOUR DOUGH SCONES | |
1 c. flour 1/4 c. starter 1 c. water 1 c. flour 1/2 tsp. baking soda 1/4 c. dry powdered milk 1 tbsp. sugar 1 tsp. salt Mix 1 cup flour, water and starter and let stand overnight in a warm place. In the morning add 1 cup flour, soda, milk, sugar and salt. Mix together and knead well, add more flour to make a soft dough, about 1/2 cup. Let rise until doubled in bulk. Shape into scones and drop into hot fat. Turn and brown other side. For extra light scones, pat into rounds and put on a well oiled surface to rise again. When light, drop into hot fat until golden brown. Turn once. Variations: Roll out, cut in donut shape. Fry in deep fat turning once. Drain well and ice with butter icing or sprinkle cinnamon and confectioners' sugar. |
