GRANDMA'S WASH DAY SUPPER 
1 1/2 lb. ground beef
1 med. onion, chopped
1 c. cracker crumbs
1 egg
1/2 tsp. salt
3 med. potatoes, sliced
1 can whole kernel corn
1 can English peas
2 c. tomato juice
Black pepper to taste

Combine beef, onion, crackers, egg, and salt as for meatloaf. Shape into patties. In 2 1/2 quart casserole dish layer potatoes, corn, and peas. Sprinkle with additional salt and pepper. Top with meat patties. Pour tomato juice over top. Bake at 325 degrees until done. Serves 6.

If using home canned vegetables, 1 pint works well.
