WHOLE WHEAT SUGAR COOKIES
1 c. sugar
1/2 c. butter
1 egg (or 2 egg whites)
2 c. whole wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
3 tbsp. milk (skim)
1 tsp. vanilla

Cream together sugar and butter; add egg (whites). Mix flour, baking powder, soda, salt and nutmeg together. Then add to creamed mixture along with milk and vanilla.

Optional: At this point you may wish to add either 1 tbsp. orange peel or 1/2 cup sliced almonds or walnuts.

Blend well. Shape into 1 inch balls and place on greased cookie sheet 2 inches apart. Flatten slightly with glass dipped in:

2 tbsp. sugar mixed with 1/2 tsp. cinnamon.

Bake 8-10 minutes in 375 degree oven until golden brown. Remove immediately to cooling rack. Makes 4 1/2 dozen.

Instead of using the extra sugar in the topping, I often just add the cinnamon to the dough instead. Good cookies for those of us watching our cholesterol or who prefer a mildly sweet dessert!
