HAM-POTATO-GREEN PEPPER
CASSEROLE
 
1/4 c. chopped green pepper
1/4 c. chopped green onion
2 tbsp. butter
Dash of pepper
1 tbsp. flour
1 c. milk
1 c. shredded sharp process American cheese
1/4 c. mayonnaise or salad dressing
3 med. potatoes, peeled, diced and cooked (3 c.)
2 c. diced ham

Saute pepper and onion in butter until tender. Stir in flour and pepper. Cook until bubbly. Add milk gradually. Cook over medium heat, stirring constantly until smooth and thickened. Remove from heat.

Add cheese and mayonnaise, stir until melted. Stir in ham and potatoes. Bake at 350 degrees approximately 30 minutes in greased 2-quart casserole. Serves 6.
