TOASTED COCONUT-PECAN PIE 
3 eggs, beaten
1 1/2 c. sugar
1/2 c. butter, melted
2 tsp. lemon juice
1 tsp. vanilla
1 (3 1/2 oz.) can flaked coconut
1/2 c. coarsely chopped pecans
1 unbaked 9-inch pie shell

Preheat oven to 350 degrees. Thoroughly combine eggs, sugar, butter, lemon juice and vanilla. Stir in coconut and pecans. Pour into pie shell. Bake at 350 degrees for 45-50 minutes or until set. Cool before serving.
