OATMEAL CARROT COOKIES 
1/2 c. brown sugar
1/2 c. butter (melted)
1 egg
1/2 tsp. vanilla
3/4 c. carrots (shredded)
1 c. whole wheat flour
1 tsp. baking powder
1 c. oatmeal
1/4 c. wheat germ
1/2 c. raisins

In a small bowl cream together sugar, butter, egg and vanilla until light and fluffy. Add carrots and mix well.

In another bowl mix flour, baking powder, oatmeal, wheat germ and raisins. Mix all together.

Pour mixture into a 9x9x2 pan that has been sprayed with vegetable oil. Bake at 350 for 30 minutes. Let cool. Cut into squares. Yields: 24 cookies - 70 calories each.
