QUICK AND EASY CHICKEN CASSEROLE | |
3 c. uncooked noodles 1 1/2 c. warm water 1 can cream of chicken soup 1/2 c. milk 1 carrot, shredded 1 sm. jar pimentos (optional), drained & chopped 1 (7 oz.) can chicken, drained (or use 1 cup leftover cooked chicken) 1 (10 oz.) pkg. frozen peas 3/4 c. Cheddar cheese, shredded Place noodles, water, soup, carrot, onion and pimento in 2 quart casserole. Cover with lid or plastic wrap. Microwave on full power for five minutes. Stir, bringing the outside edges to the center. Cover and cook on full power for five minutes. Add chicken, milk, cheese and peas. Stir well to combine. Cover and continue cooking on full power for 6 to 8 minutes or until noodles are tender. Season to taste. Top with buttered bread crumbs or crumbled potato chips. Allow two minutes standing time before serving. NOTE: Other kinds of soups may be used in place of cream of chicken. Tuna or other meats may be substituted for the chicken. |
