SHEPHERDS PIE (BRITISH) 
Before we start, let us be clear and lets get it right. Shepherds pie is made with lamb, cottage pie is made with beef. Never in the history of the British isles has cheese ever come close to either. If you see cheese anywhere near a recipe for either, put it down to the USA's obsession to add cheese to anything that moves - it doesn't generally belong with meat unless you desire lead in your stomach, this said.

1 lb. lean lamb, minced
1 large onion, sliced
1 medium carrot, chopped
1 stick celery, chopped
enough beef stock to cover
salt and pepper
3 to 4 tsp. corn starch or 2 Bisto (if you know what it is) and 1 corn starch
2 lb. good mashing potatoes
4 oz. (1 stick) butter
salt and pepper

Let's get this right and the best way: Add minced lamb into a casserole dish, add onion, carrot, celery, beef stock, corn starch and/Bisto/corn starch, salt and pepper, to taste, and stir.

Cook in a slow oven, say 275°F for 2 hours. You can do all this on stove top for about 20 minutes BUT the flavor is never the same.

When complete, drain off gravy and reserve.

Boil and mash potatoes with milk, butter, salt and pepper, however DO NOT make it into a wet paste. It should be firm and almost chunky.

Add back enough gravy to the meat to make it moist. Gently add the potato to the top and build up. Spread with a fork, finally making fork marks both up and down and across to form a basket like pattern.

Put oven temperature at 400°F, then bake until potato is crispy and golden on the peaks (about) 30 minutes.

Serve with remaining gravy and steamed cabbage (preferably Savoy, if you can get it). NO CHEESE, PLEASE.

In quebec its actually called paté chinois, 'chinese Paté' made with beef, mash potatoes and corn. Seems we inherited it from the Brits, including putting vinegar on our french fries. I also wanted to know the real shepherd's pie and enjoyed the comments.

I loved everyones comments! I'm in Seattle with a "foodie" husband and daughters- We love shephards pie with lamb or leftover roast beef and have it about every 3 weeks -- we add red wine to the brown gravy and simmer a long time -- its sooo good! Truly, I found this to be quite entertaining. So much so, that I am sending the recipe to myself (via e-mail) so that I can show my husband. We are both a couple of foodies. Our ancestors were English, Irish, and Scottish. Although, we reside in the good old US of A. Hazel park, Michigan. Otherwise known as hazeltucky. I went looking for an authentic Shepheard Pie recipe and wound up with a LOT more than I bargained for! lol Seriously, I think we all forget the point here: Sharing GOOD recipes! Take what you want and leave the rest! Can't wait to try Neil's recipe, as well as some of the other's suggestions! I'll do it right here the good ole US of A whilst I will not use cheese, my husband is sure to :)

Neil you are not right with your recipe for shep pie it is minced lamb, onions swetted off in frying pan, then put 2 cubes in,a little water then put in a oven proof dish,put mash potatoes on top then put in oven to bake for about 1/2 hr,cottage pie the same way only using beef.Also I thing you are very rude,( good old yorkshire lass)

Neil, thanks for posting the recipe. I am always trying out new ideas on how to make this yummy dish. The tounge and cheek humor made me laugh and NO it does not sound snobbish. By the way I use ground turkey and it tastes pretty good..

Fine recipe, Neil, thank you. Care not about the sensitive ding bats who cry "rude" or "snobbish" or "insensitive." These wimps have been inoculated with the needle of political correctness, a new-found religion that put an end to the enjoyable ethnic humor that once was an American tradition, PC is far worse than cheese in Shepherd's Pie. PC has destroyed a society, not just a meal.

So, I went looking for a recipe and ended up here - killing myself laughing and reading. We will now have to have sausages, chips and egg for dinner as I got side tracked reading instead of cooking. lol. On the plus side I didn't see a bad comment about the recipe - so will print it and give it a whirl but will have to settle for using beef as minced lamb would cost an arm and a leg here in the US. Sometime we have to make do... Oh yeah, there is cheese in the sausages we are about to have and they are good but no cheese in the pie!! :-) This has to be the best 'recipe' I have yet to try. lol.

Wow. I was going to make this dish for dinner tomorrow night, and just wanted to jog the old memory. I actually first made this dish in Costa Rica, where lamb is not easily attained in some areas. We had to settle for potatoes in a box and Queso Blanco to go with our minced cow nether-regions. Despite that, it was exceptional. And we had to do it in Spanish. So Booyah.

However, after following Neil around the various postings, I feel mostly inspired to take week-old McDonalds burgers, crumble them up, and puree french fries to go on top. Then, the piece de resistance will be a fine patina of squeeze cheese. Take that, officious nose-thumbers!

Loved all the comments. I am scandalous and make my shepherds pie by browning ground beef, adding onions and celery, then stir in frozen peas, carrots or corn or all 3, whatever I have on hand,then leftover gravy and cream of mushroom soup, put in casserole dish, mashed taters on top and bake for half hour. Love it....loved all the comments and didn't find Neil rude (am from Canada....eh!)
