MY GRANDMOTHER'S POTATO FONDANT 
Mashed potatoes (without butter or salt)
Powdered sugar
Flavorings
Chocolate for dipping (bitter chocolate)

Take several cups of mashed potatoes and put as much powdered sugar as you can possible work into it. Also add some flavoring. Our family's favorite was black walnut. You need extra flavoring as well as the nuts. Put this mixture into a crock (covered) and leave it in a cool place for about a month. When well seasoned, the fondant can be rolled into balls and dipped in chocolate. Put a little sugar in your bitter chocolate, BUT DO NOT DIP IN SWEET CHOCOLATE. It would be unbearably sweet.
