QUICK ENCHILADA CASSEROLE 
1 pkg. (12) corn tortillas
1 lg. can Enchilada sauce
1 lb. ground beef
1 sm. onion, chopped
3/4 lb. Cheddar cheese, shredded
3/4 lb. Jack cheese, shredded
1 sm. can sliced black olives
1 sm. can chopped green chilies
Salt & pepper to taste

Mix together cheeses.

Brown ground beef with onions; drain. In 8 x 8 inch glass baking dish, pour enough sauce to cover bottom. Layer in the following manner: Tortillas, sauce, cheese (mixed), olives, chilies, ground beef mix. Keep repeating until all ingredients are used. Bake at 350-400 degrees until cheese is bubbling and beginning to brown.
