2 c. flour 1/2 tsp. salt 2 eggs About 8 tbsp. water Mix all ingredients with enough water to make a medium soft dough. Knead well, then roll out until thin. Cut into squares and add your favorite filling. Pinch edges well. Drop in boiling salted water and cook until progies rise to top of water. Then cook for 5 minutes more. Drain and place in serving dish, topped with melted butter and onions if desired. You can also deep fat fry until golden brown, or fry in butter in a skillet until brown. Some fillings are mashed potatoes and cheese, mashed potatoes and browned onions, plain mashed potatoes, sauerkraut, sauerkraut and mashed potatoes, cooked cabbage, cooked cabbage and onions, and even fruit. Its all up to your own taste. Many people add sour cream to them also. |
