CLAM CAKES 
1 egg
1/4 tsp. baking soda
1/2 c. milk
1 tbsp. sugar
1/2 tsp. cream of tartar
1 c. flour
Dash of salt & pepper
Clams, shucked bellies removed, washed, drained & chopped

Sift dry ingredients together and add to beaten egg and milk. Mix well. Batter should be about the consistency of cake dough. If thinner, it will soak fat. If too thin, add more flour. Add chopped clams and stir. May be fried in fry pan or dropped in hot fat.
