SWEET POTATO PUFF 
4 c. cooked sweet potatoes or 1 lg. can
2 eggs, separated
1/4 c. heavy cream
2 tbsp. butter
1 tsp. salt
1 lg. ripe bananas
3 tbsp. brown sugar
1/8 tsp. cinnamon

Put potatoes, egg yolks, cream, butter and salt in mixer. Mix until smooth. Pour into greased casserole. Top with layer of banana slices. Beat egg whites until foamy. Add brown sugar and cinnamon. Beat until soft meringue forms. Spread meringue over potato mixture and bake at 350 degrees for 30 to 35 minutes until top is golden and potatoes are heated through.
