SPINACH QUICHE 
1 (9-inch) pie crust
1 (10 oz.) pkg. spinach, drained & dried
1 c. mushrooms
2 tbsp. butter
1/2 c. green onion
4 eggs
1 1/2 c. whipping cream
2 tbsp. flour
1/8 tsp. nutmeg
1/4 c. fresh Parmesan cheese, grated
1 1/4 c. Swiss cheese, grated
Salt (to taste)
Pepper (to taste)

Preheat oven to 400 degrees. Prick pie crust and line with pie weights. Cook for 10 to 12 minutes, or until golden brown. Cool. Saute mushrooms, spinach and green onion in butter. Beat eggs, whipping cream, flour and nutmeg. Layer vegetables, Swiss cheese, egg mixture and top with Parmesan cheese. Reduce oven to 375 degrees and cook for 45 to 50 minutes, or until knife comes out clean. Let quiche set for 15 minutes before serving.
