THE PIED PIPER'S CHEESE AND
MUSHROOM TARTS
 
1 egg
1/4 c. ricotta cheese
1 tsp. Worcestershire sauce
Salt and pepper to taste
4 slices of bread, crusts removed
1/4 c. finely chopped mushrooms
1/4 tsp. onion powder, or less to taste
butter

Set oven at 375 degrees. In a blender combine egg, cheese, seasonings, and Worcestershire sauce. Blend until mixed. Stir in the mushrooms. Flatten the bread slices and spread lightly with butter on both sides. Press the bread slices into muffin cups of a muffin tin. Divide the mixture from the blender evenly amongst the 4 muffin cups lined with bread. Bake 15 minutes or until cheese sets. Remove from muffin pan and cool slightly before serving. Recipe may be doubled easily.

Variations: instead of mushrooms, use onion and zucchini to equal 1/4 cup or replace vegetable mixture with finely chopped, cooked ham, shrimp or tuna.
