LIME PICKLES 
2 c. slaked lime
2 gal. sliced cucumbers
2 gal. water
2 qts. cider vinegar
1 tbsp. salt
1 tbsp. mixed spice
1 tbsp. whole cloves
9 c. sugar

Remove ends from cucumbers and slice. Mix lime, cucumbers and water and cover. Let stand 24 hours, stirring frequently. After 24 hours, drain and wash in cold water thoroughly. Make sure lime is rinsed off completely. Cover cucumbers with cold water and let soak for 3 hours. Drain.

Mix vinegar, salt, spices, cloves and sugar and bring to a gentle boil. Cool. Add cucumbers and let stand 24 hours. Boil 5 minutes. Put in sterile jars and seal. Ready to eat in approximately 2 months. Green food coloring can be added to boiled mixture. Cucumbers can be cut in 1 inch chunks. If pickles are put in sterile jars while boiling hot, they self seal and water bathing is not necessary.
