SCANDINAVIAN SALAD 
1 (16 oz.) can baby beets, drained
1 (8 oz.) jar herring in cream sauce
1/2 c. sour cream
2 tart apples, (4 cups) coarsely chopped
2 tsp. lemon juice
1 tbsp. fresh dill, chopped
1/2 tsp. salt
1 white onion, sliced
Fresh dill for garnish

Slice beets in half and drain well. In large bowls place remaining ingredients except beets, toss to mix well. Carefully fold in beets. Refrigerate at least 3 hours, just before serving add dill for garnish.
