CHERRY CHEESECAKE 
1 env. Knox gelatin
1/2 c. sugar
1 c. boiling water
2 (8 oz.) pkgs. cream cheese
1 tsp. vanilla
9" graham crust

In large mixing bowl, mix gelatin with sugar and boiling water and stir until dissolved. With an electric mixer, beat in cream cheese and vanilla until smooth. Pour into prepared crust. Chill until firm. Garnish with your favorite fruit.
