APPLE PANCAKE 
1 c. flour
1 tbsp sugar
1/2 tsp. salt
1 1/2 c. milk
3 eggs
4 tart apples
Lemon juice
Confectioners' sugar
Jelly

Add sugar, salt and milk to sifted flour. Add eggs, beating between each addition. Peel, core and slice apples very thin. Sprinkle with lemon juice. Mix apple slices into batter. Melt butter in small frying pan and fry very thin cakes on both sides until golden. Serve sprinkled with sugar and jelly.
