BUTLER'S APPLE PANCAKES 
1 egg
3/4 c. buttermilk
1/2 c. applesauce
1 1/2 c. chopped, peeled apples
1 c. whole wheat flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 tbsp. salad oil

Beat egg and add the remaining ingredients. Beat until smooth. Lightly grease griddle and heat to 350 degrees. Pour batter from ladle onto hot griddle. When pancakes are puffy and full of bubbles, turn over and bake on other side until brown. Yield: 10 (4") pancakes.
