POTATO PANCAKES 
1/4 c. milk
2 eggs
3 c. diced raw potatoes
1 sm. onion, quartered
3 tbsp. flour
1 tsp. salt
1/4 tsp. baking powder

Put all ingredients in blender container in order listed; cover and run on speed 7 (or high) just until all potatoes go through blades, about 10 seconds. (Do not overblend or potatoes will be liquified.) Pour small amounts onto a hot, greased griddle or fry pan. Fry until brown on both sides, turning once. Makes 18 pancakes.
