MUFFINS APPLE SPICE 
1 c. whole wheat flour
1 c. all-purpose flour
1/3 c. brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/8 tsp. ground cloves
1 lg. tart green apple
1/2 tsp. ground nutmeg
1/8 tsp. ginger powder
1/8 tsp. salt
1 c. buttermilk, at room temperature
1 egg, at room temperature
2 tbsp. vegetable oil
1 1/2 tsp. vanilla extract

Heat oven to 400 degrees. Peel, cut and core and slice apple approximately 1 cup. Spray muffin cups with Pam. Stir dry ingredients all together.

In another bowl, mix buttermilk, egg, oil and vanilla. Make a well in the center of flour mix. Add buttermilk mix and stir, stir in the apple. Spoon the batter in cups. Bake 15-20 minutes. Cool 5 minutes before serving.
